Cave-Aged Goats’ Cheddar is hand-made at every stage. Once wrapped in cloth, they are moved to their famous Wookey Hole Caves. While this cheese is similar in texture to a traditional Cheddar, the goats’ milk brings a very different character. The flavour is mild and nutty, with a touch of sweetness, that is rounded out by the more earthy tones bestowed.
