Tom Calver used to smoke his cheeses in a Tardis-like phone box, but he now uses a smoker not unlike a wee wooden chicken shed. Certainly nothing to cluck at! Smoky notes of beech wood are most pronounced near the cheese’s nose, but complex Cheddar flavours and grassy notes become more evident towards the rind.
