Tête de Moine PDO, literally Monk’s Head, is a smeared and soft-cut raw milk cheese with a very fine paste that melts easily in the mouth. It is not cut, but is turned into fine, floral and spicy rosettes with a scraping tool such as the Girolle. The scraping allows the full development of the aromatic, melt-in-the- mouth flavour to come out.
