Jo and David Clarke are famous for their 2005 revival of traditional, raw milk Red Leicester. Will Clarke, their son, has now joined the family business. This raw milk blue cheese is made by Will to a traditional local recipe. The paste is compact and a little crumbly, and blue veins meander through narrow fissures between the curds. Mellow, buttery and rich.
