Made exclusively from whole raw milk from cows of the breed Bovines Montagnardes, which include Abondance, Tarine and Montbéliarde. Under its fine rind hides a creamy paste, mild and creamy, with a taste of cream and hazelnut. The Reblochon «Laitier» is made 24 hours after the milking, with milk from different farms. The fabrication can be done by machine. The Reblochon «Fermier», on the other hand, is made on the farm itself, twice a day and each time immediately after milking. All stages of production are done manually. The farm-fresh variety bears a green casein seal. Its flavour is more intense than that of Reblochon Laitier.
