A northern French hard cheese from the region around Lille.

The ripened cheese lasts between 3 and 24 months, sometimes even longer.The rind is gray-brownish, the paste is intensely orange. The taste of Mimo- lette varies according to the degree of ripeness. A young mimolette (ripened for 2 months) is much milder with a pliable paste, an «older» mimolette of 12-14 months is firmer and nuttier in flavor, and an «extra old» mimolette (18-24 months) is more crumbly, with intense coffee or cocoa flavors.
