A washed version of Waterloo, Maida Vale is more unruly than its refined and elegant sister. The young cheeses are washed in Soundwave IPA, from Siren Craft Brewery, to develop their russet coats. The paste is as rich, buttery and delectable as you would expect from a Guernsey milk cheese, but the rind delivers an altogether punchier finish. All the richness of Waterloo, but with a kick!
