Created by Suzanne Stirke, using a traditional Wensleydale recipe at her dairy on the edge of the Yorkshire Dales. Production has moved to Lancashire, but Andrew Ridley still makes this cheese to Suzanne’s high standards. The traditional recipe produces a moist and creamy cheese, with a honeyed flavour and lower adidity than modern mass- produced Wensleydales. In fact, it is as far away from these as you can imagine.
