Known to have been made as long ago as 1796. The paste has a dappled tone of straw and bright copper, as annatto is added to some of the curds. It has a fresh, zippy acidity that makes a satisfying counterpoint to a more full flavoured, rounded profile. A beautifully balanced cheese.
