Made from raw milk cow collected in a 30 km radius around the Fromagerie Dongé. Its molding is done manually, by several passes successive using a ladle. After draining, salting with dry salt and drying, the cheeses are stored in ripening cellars for a period of 4 to 8 weeks . There they will be returned by hand 1-2 times a week. It has a thin, white rind, dotted with streaks red.
