And besides, it is a seasonal specialty, available only from September 10 to May 10. Soft cheese with washed rind and covered with a light fluff of mold. The cheese has an authentic aroma characteristic of Mont d’or with a hint of spruce. The taste is woody and creamy, with persistent fragrance. Its texture is slightly fluid and very creamy. It tastes good cold or plain or warm with potatoes.
