Comté is a hard cheese made exclusively from raw milk from cows of the Montbéliard and Simmental Français breeds in the Jura Massif. 

Flavors can vary from wheel to wheel, depending on the producer and the season. Generally, flavours range from fruity to roasted, but Comté can also have herbal or savoury notes. Comté made in the summer tends to have more complex flavours with a fruity predominance, while comtés made in the winter tend to be characterised by more herbal roasted flavours.
