Cheese mainly produced in the departments of the Cantal. The Cantal «Entre Deux» ripens between 3 to 7 months, the «Vieux» at least 8 months. Its dry rind first turns golden, then brownish. Its firm paste is melting and becomes crumbly with steady ripening. Taste-wise, it becomes more fruity, with notes of hazelnut and finally intense and long-lasting.
