Small goat crottins cheeses made from whole goat’s milk, once called «fromage de crème» (roughly «cream cheese»). When ripened for at least 5 days, it develops a fine, creamy paste. When young it captivates with aromas of hazelnut and as it matures its flavours becomes more intense.
