Ponsanooth-based Lynher Dairies is best known for its nettle-wrapped cheese Cornish Yarg, which was first produced more than 30 years ago on Bodmin Moor by a farmer named Alan Gray (Yarg is Gray spelled backwards).
First developed in 2004, Wild Garlic Yarg is wrapped in leaves foraged from the Cornish countryside during the spring. It's texture is crumbly, but slightly firmer than its nettle-wrapped sister because the leaves hold more moisture and help the paste to mature faster. The flavour is milky, with a gentle garlic flavour from the leaves.
Pairing: Pales Ales or Chardonay. It also melts well on toast and can be used to stuff roasted chicken. No 93 Ale Chutney.
