A raw milk farmhouse cheese originally made by Graham's mother. The family have their own herd of Friesian cows and they are last the maker of traditional Lancashire using the two-day curd method.
The flavour of the unpasteurised milk and the buttered muslin rind produces a rich and complex white Lancashire, which melts in the mouth. It has a crumbled texture with a clean, lactic finish.
Mrs Kirkham's makes the finest cheese toast.
