A semi hard (from french word mi-mou - feminine mi-molle) cheese with sweet, salty caramel and hazelnut notes. Created in 17th century in Lille as an alternative to Dutch Edam.
Bright orange (coloured with annatto) it looks like a cantaloupe melon inside.
