Northumberland Cheese Co. Northumberland

Made at Seaton Burn in Northumberland, not far from Brinkburn Priory. Brinkburn Priory was formerly a medieval monastery. The French monks who lived there passed on their expertise in cheesemaking to the local farmers, who passed it on to their children. Smoked Northumberland is still made in the old French ‘Tomme’ style. Smoked for two days over oak chips, the cheese has a smooth and creamy smokiness, and a full yet delicate flavour.
