The King of Alpine cheeses.
Made only during the summer from the milk of Tarine or Abondance cows that enjoy lush alpine and mid-alpine meadows. The distinctive concave shape comes from the beechwood hoop used to mold the cheese.
Selected once per year in the spring and released at 8-10 months old. Smooth, creamy rich with a pale yellow paste and a very distinct aroma.
Commonly used in fondue and pairs particularly well with all white wines and fish.
